The Shonai area is one of Japan’s leading rice-producing regions.
The cold winter weather and clear snow melt water from the mountains nearby is the perfect environment for sake brewing.
After harvesting rice in the fall, the farmers’ winter job was to make sake.
There are 18 sake breweries in the Shonai area, and the techniques have been handed down from generation to generation by a group of Toji (master brewers) who excel in the art of sake brewing.
